Brutalisten is a dogma restaurant in Stockholm, that follows The brutalist kitchen manifesto. The main rule is the following:
ingredients are used alone for a certain dish; only water and salt may be added.

“The restaurant is trying to get rid of the background noise and get directly to taste. And taste is something that can’t be preserved like artwork can: you eat it, you destroy it, and you have, let’s call it, an experience with it, but then it’s gone.”
